Groundnut Soup Tuber Mix

Clean and cut vegetable into chunk: cassava, plantain, (garden eggs if large). Keep aside. Clean chicken and cut into pieces.

Place the whole onion, pepper, tomatoes garlic, roughly cut red bell pepper, smoked chicken in a pot with hot water. Then cover and bring to boil and reduce to simmer 15 min until vegetables are soft.

Remove vegetable and blend. Then return to the soup. Add MAGGI Cube, bring to boil reduce to simmer Dilute the peanut paste with warm water and mix to obtain light consistence. Keep aside

Pour the peanut in the rest of the soup and simmer for 20min until oil rises to the surface of the soup. Add the vegetable cut into chunks: cassava, plantain, garden eggs, okra. Let simmer for 10min. Peanut soup is served with starchy staple side dish: pounded cassava, yam, plantain, or rice.
