Heat up a pan, add coconut oil and allow to get hot. Add chopped onions and allow to fry frying for 3 min. Add the chopped pepper, tomatoes, red bell pepper, ginger, garlic, and allow to fry for 3 min.
Add coconut milk, water, MAGGI Cube then bring to boil. Add the rice and stir, allow cooking for 20min. Add the seafood mix, big prawns. Stir and cook for 5min Cut the green bell pepper and carrot into dice then add to rice.
Fine cut the lemon grass and add to the rice. Let simmer for 5min.
